To Windy, Cook

The wind is back again. The temps have been good but the wind not so much.

I bought some really nice veggies intending to put them on the grill outside. But the wind was not allowing me to be out there. I figured I would get on it first thing this morning as usually the wind doesn't pick up until around noon. So I made a really good marinade and let the veggies sit in a plastic bag over night in the fridge. Got up early and dang if the wind wasn't already blowing like crazy. So into the oven they went. They came out good but it isn't what I wanted to do.

I had bought an acorn squash the other day also and I figured I better get that made too. I had never cooked one before so I googled recipes and just went from there. I like to throw my own things together. It sure was good.

I cut it according to the recipe and cleaned it out, cooked it for about 30 min. let it cool a little so I could stuff it with this mixture below,
I had some left over turkey loaf and broke it up, used some beans I had cooked, Parmesan cheese, I mashed all of it up and then added a small amount of mixed veggies, a few spices and put it in the oven for another 20 min. then sprinkled some grated Colby cheese over the top. Very tasty and I have another half left over.

Here are the veggies I wanted to grill. Lots of zucchini, egg plant, red and yellow baby bell peppers, red onion, tomatoes, asparagus and mushrooms. The marinade was made with olive oil, red wine vinegar, garlic and other spices. Also very good and lots left over.
Tomorrow more wind but I need to get out of the house and it is Sunday so Tracy and I will go out for out breakfast and who knows what else.

  1. We've had rain for 7 days straight Finally yesterday afternoon it broke up into partly cloudy...You're veggies look great!! Love acorn squash!! Sprinkle with nutmeg and toasted sesame seeds, a great side dish!

    More rain for you as well as TX hope the sun comes out for you.
    I had never cooked or as far as I know eaten acorn squash and I love it. I like your way of making it as soon as I finish all these veggies I'll buy another one and try your way.

  3. Really windy here, getting old, wish it would stop. Your veggies look good. We were going to bbq but it was so windy I just threw the chicken in the crockpot and it all worked out.

  4. That's a different twist on the Acorn Squash making it more of a meal rather than just a side dish. That stir fry looks yummy. I can nearly taste it just from the picture.

    This wind is getting OLD sick of it. And it's cool enough to sit out on the porch but this wind will make my eys itch and nose clog up in about 3 sec.

    It filled me up pretty good too, changing up recipes. Still would have loved to grill those veggies but they are tasty.

  7. I love sauteed vegetables - used to do them on the grill but don't bother with grilling anything now. Yours look really appetizing.
