A Cooking Day

Got up early today, I wanted to get to Wally World before the crowds. I took Fred out and he sure was in a hurry to get done and back onto the house. Yes it was cold. 30 Degrees cold.

So I knew I needed some nice hot coffee and read some blogs first. Then got ready and went shopping. I still got there at the right time as there wasn't many people in the store at all.

Came home made more coffee and breakfast and read more blogs.

I figured I sat around long enough and started cooking. I made a nice big crock pot of veggie soup, chicken pot pie and cheesie chili chicken. These are all easy to make meals. But still make lots of dirty pans and stuff.

I broke things up and put them in small portion containers for freezing. I just had enough room so making the turkey loaf tomorrow is out of the question.

I still have to cut up the bananas and put them in snack zip bags and freeze them for smoothies.

By time I finished cleaning up I really didn't feel like cutting up bananas.

Veggie soup, I throw what ever I have around in it. I will have to share this
with some one. haha

Chicken Pot Pie
cubed 2 chicken breasts
table spoon of fat free Italian salad dressing
Heat salad dressing in skillet and put chicken cubes in  to slightly cook
add other ingrideants and cook until all is mixed
I use 1 can 98% fat free cream of chicken soup
half bag of mixed frozen veggies
1/2 cp of grated colby or any of your favorite cheeses. (this makes it thick)
one roll of reduced fat cresent rolls for the top.
( the recipe was for pie crust but I like this better)
as you can see there were 2 left so I stuck them in the corner I should have left them until I took the picture and should have not cut it either but almost
forgot to take the pictures
This freezes well and then I put it in the microwave to heat


Chile Chicken

1 can cream of chicken soup 98% fat free

1 cup chopped green chili

1 cup grated cheddar cheese ( or cheese of your choice)

½ cp parmesan cheese
1/2 onion, chopped, sautéed
4 large chicken breasts, skinned, boneless ( or as many needed )
Combine first four ingredients and heat until cheese is melted. Pour over breasts in casserole dish.
Cook in 325 degree oven 30 min .
Chicken
  The chicken can be served over rice.

    Yes and since I really hate to cook I do as much at once as I can fit in the freezer. Then just pop it into the microwave with some veggies on the side, Done!

    Yes there us I just threw them in for good measure. They had been open for some reason and I didn't want them to go bad.

  4. Great front page....just beautiful and the chicken sounds good going to have to try that. Never put the crust on time...will do that. Its cold out there it can warm up anytime Arizone!!! A friend of ours is in Florida he said its been in the high 80's all week...lucky!! Talk later, Kathy

    Yes the crust is only on top for the less calorie thing.
    It needs to warm up here some day.Oh it says Sunday yay!
