The Wind Returned

Woke up to a nice morning with a bit of a breeze. But the
sun rise  sky was something. Of course by time I grabbed
the camera it was going fast.

After Fred and I had breakfast I jumped in the shower so I
could start my day.

Went for  hair cut and drove to the north side of town to
pick up my second pair glasses. I was going to stop at
Spouts for some veggies but decided against it and came
back home.

I checked my weeds and they are starting to die. That stuff
works well when you use the right one.

I made stuffed Portabello mushrooms tonight boy that was
some good stuff and easy to make.
Preheat oven to 450
1/2 c. Quinoa rinsed or couscous
 Olive Oil spray
1tsp thyme
2/3c. frozen corn
3 oz. crumbled feta cheese
1/2 tsp. ground cumin

In 2 gt sauce pan combine quinoa and 3/4c water. Heat to
boil. Reduce heat to medium low. Cover and cook 15 min
or until liquid is absorbed.
While the quinoa cooks spray mushrooms with olive oil
add salt. When quinoa is cooked add corn, thyme, feta
and cumin.

Pile ingredients on top of mushrooms and bake for 10 min
or until mushrooms are tender.

I did not use cumin and I used couscous instead. It also
called for brussels sprouts on the side and I didn't use
them I hate the way they smell and taste.

  1. Love the pictures. The last part of your post where you are stuffing mushrooms is in a foreign language to me. All my recipes start with 'set your microwave at'.

    I didn't have time to go but did talk to the guy. He said it is going to take anywhere from 2,000. - 5,000. get road worthy and that doesn't include the inside work. I am busy every day this week and don't know if I will get down there to look.
