New Recipes

The morning was so nice so I went out and finally sprayed the weeds. Swept up the mess on the porch from all the wind. Which came up again shortly after I finished.

I did some searching for new recipes today and found a few. The one I will share tonight was given to me by someone in the crochet class. I also made a turkey loaf.


Mock Potato Salad
2 cps Cauliflower (cook firm, cool, chop)
2 Hard boiled eggs, chopped
 2 Tb, low fat Mayonnaise ( 2 grams)
1 tsp. salt
2 Tb, bell pepper ( your choice I used mini red)
1 Stalk celery, diced fine
2 tsp olive oil ( I used 1)
2 tsp, red wine vinegar
1 tsp. Prepared mustard ( I used spice mustard)
Mix all ingredients well and top with paprika, and chill well

Total points for 4 servings, or 2.5 points per serving
I use salad plates instead of larger plate for smaller portion control.

Now I don't think it tasted like potato salad but it sure was tasty.

As I make new things I will share them with you. They are all low cal or low carb.

  4. I love potato salad, my mom's makes a really good old fashioned one. Its good that you are making better choices for a healthy life style...its hard these days when processed foods and eating out is the rage.
