The Culprits

I finally remembered to grab my camera this morning on the way to exercise class so I can take pictures of some of the culprits of the allergy season. Of course the winds have added to every one's misery too.

Palo Verde trees usually don't bloom this long and of course they grown everywhere. You can see the Saguaro in the back ground is now budding out too

 I'm not sure what the name of these trees are but the floors look like Orchids they are so pretty. Due to the wind the flower had to be held still
 Oleanders usually seen  as bushes these have been worked into trees but they are really bad for allergies too

Tomorrow we have our make up exercise class and then another class on Friday that's 3 days in a row I wonder how I'll manage this well I hope.

Tonight I made the Loaded Cauliflower and it sure was good

Ingredients:
1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins) I used imitation bacon bits
6 Tbs chopped Chives
1/2 cup Mayonnaise ( fat free)
1/2 cup Sour Cream (fat free)
2 cups Colby Jack Cheese ( may use cheddar) or any cheese of your choice
8 oz container sliced mushrooms (I don't use mushrooms in mine)(optional)
Directions:
Preheat oven to 425°
In a large pot boil water and cook Cauliflower for 8 - 10 minutes, drain and let cool.
In a large bowl combine sour cream, mayo, 1/2 of crumbled bacon, 3 tbs chives, 1 cups of cheese, mushrooms and cauliflower and mix well... place in baking dish and cover with remaining 1 cup of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted. top with remaining 3 T chives and serve.

This is one of the flowers that made it through the winter

    I wonder how bad it is up north, I do know winter arrived there very late this year and it is still cold. At least you had rain to put it down all we seem to have is more wind to make things worse.

  4. I love the cauliflower recipes that I have tried....will try this one too. Last night I made a new stand by Cauliflower mashed potatoes. I boil the cauliflower and potatoes separately so that the potatoes don't turn to mush. Then I liquid the drained cauliflower in the blender, adding flavoring of choice. (Chicken boullion, ranch dressing or any other of choice) I use equal amounts of cauliflower and potatoes. I added cheese without butter or milk. Yummmmm

    Sounds good. But I have given up most startches and potatoes was on the list and I love my potatoes too. So I have really gotten into the cauliflower recipes. Hope you enjoy the one I posted.
