Cooking Day

Sunrise today was absolutely beautiful. It just went on an on and just kept changing.

I figured I better stay home today and get all the squash cooked. I cut up most of it and put it in the crock pot with low sodium chicken broth, tomato paste, small can of tomato sauce, herbs, onion and garlic. Oh was it good.

The butternut squash and the green pumpkin looking thing I slit and put each one in the micro wave for a min. and then sliced it a little more and returned for another min. I was then able to slice  them open and clean out the seeds and that other stuff. Put them in a baking dish with olive oil, a little butter rubbed on, nutmeg, cinnamon, honey and baked them for 1 hr. Heaven!  

The sunset was just as gorgeous tonight as the sunrise was this morning. I used the Kodak and some of the pictures seem blurry.

    I put it in serving sized containers and freeze it. I do lots of cooking that way.

  4. You got some great pictures Jo. Very nice. We managed 63 degrees yesterday, big change. I baked a roast and made banana bread with 2 very tired bananas that were lingering on the counter. Eh? Hate that when I miss them but at least they didn't go in the trash.

  6. What a gorgeous sunset! And the cooking pictures are making my mouth water.

    We had an "I don't want to cook tonight" camp meal of fried pepperoni slices and scrambled eggs. Tomorrow night it will be grilled pork chops. Sure wish I had some of your squash to go along with it!
